- I've been telling anyone who'll listen about this awesome cookie recipe we have. Now, I don't want to get into any trouble here, but they closely resemble the excellent cookies they give you when you check into Doubletree hotels. Here's the recipe:
1/2 c rolled oats
2 1/4 c all-purpose flour
1 1/2 tsp baking soda
1 tsp salt
1/4 tsp cinnamon
1 c (2 sticks) butter, softened
3/4 c brown sugar, packed
3/4 c granulated (white) sugar
1 1/2 tsp vanilla
1/2 tsp lemon juice
2 eggs
1 1/2 to 3 c semi-sweet chocolate chips
1 1/2 c chopped walnutsPreheat oven to 350 F. Grind oats in food processor or mortar and pestle, I like to leave them a little chunkier. Combine the oats with flour, baking soda, salt, and cinnamon. In separate bowl, cream together butter, sugars, vanilla, and lemon juice. Add eggs and mix until smooth. Stir the dry mixture into the wet mixture and blend well. Fold in chocolate chips and walnuts and mix until evenly distributed. Golfball sized pieces of dough make fine little cookies but the recipe actually says to spoon rounded 1/4 cup portions onto ungreased cookie sheet. It's up to your preference. Bake for 16-18 minutes or until cookies are light brown and soft in the middle. Don't overbake. Store in sealed container when cool to keep soft. The dough can be used fresh, kept in the fridge, or frozen. They all work, it just makes baking time a little different and I recommend flattening frozen dough before baking.
